This basic recipe I am giving you here is not hard to do and it is one that you can improvise on and embellish with your family’s nutritional needs in mind. But first, look it over and learn the basics to simple bread making (if you are not already an accomplished homemade bread maker).
Baking bread in the crock pot is a simple matter. You have tons of latitude with the process. You don’t even have to knead it! If you like to knead the bread after letting it rise, however, there is no need to stop doing that – just put it in the crockpot once it reaches its final rise, and cook on high for 3 hours.
Baking in the Crock Pot
As you get familiar with baking bread in a crock pot, you will find the process of baking in a slow cooker very convenient and can convert other bread recipes to be baked in the crock pot. Quick breads like banana bread, cinnamon rolls and even dinner rolls are all possibilities on the horizon.

did you just put the dough in the slow cooker with paper underneath or did you put it in a pan with foil under it?
I used a metal pan with foil lightly placed over the top of it (to keep water drips off the dough/bread). I don’t see why just using parchment paper underneath wouldn’t work just as well – except it might be a tad messier to clean up.
Was the “optional” egg for use in the dough or used after cooking to glaze and brown the bread under the broiler?
There is flexibility in the recipe. Egg, included in bread, gives a different and somewhat chewier consistency. It does add nutrition but some like the way bread tastes without the egg. If you want to add the egg then beat it and add it in the liquid measurement. I have added the yolk into the liquid and retained the white separately to brush on top of the bread for the way it makes the crust brown while baking in the oven. However, this slow cooker bread doesn’t give you the same crust as an oven does so I wouldn’t brush the top with the egg white. In short, if you like a chewier bread add the egg in or if you like a flakier bread leave it out. Lots of options!
